I make "The Best" pecan sandies. Great recipe. It calls for rolling 1-1/2" diameter logs and refrigerating for 4 hours or more. I don't have the techmique for wax paper. These mats cover for me. Nice round logs every time. The 1-1/2" is marked for you, along with 2 others. How much dough do I need to make a log? That's the real genius! The rolls have end caps. You roll your log, and then push them in until the dough feels right. The logs will be longer or shorter, depending on your doughball. I love how the logs feel after refrigeration. Firm, not fragile like a wax paper log. At first, I was annoyed with the 1/4" marks for cookie thickness. I like 3/8". Hey presto: Every 3rd mark is 3/4". Halfway in between is 3/8". They're silicone, and dishwasher safe, but how would you do that? They clean very easilly by hand, and air-dry rapidly.
